Vegan Chicken Cacciatore over Mashed Potatoes




I have seen this recipe done many different ways, based on what region you live in and where your grandma was born they may differ. So me being the hearty meal maker that I am I love throwing this together it's easy, cheap and full flavor. I have learned this recipe form many years of screwed  up attempts and research the net for other ideas so I can say this has been a work in progress. I found over mashed taters is the best way you enjoy this meal but it goes great over anything you want pasta, polenta, taters you get the point.

Here we go

Vegan Chicken Cacciatore 

1 tbsp canola oil

2 cloves minced garlic

1 onion sliced 

1 green pepper sliced

1 large or 2 small carrots shredded

1 cup mushrooms sliced 

1 tsp black pepper 

1/2 tsp salt 

2 tbsp Italian seasoning 

2 cans diced tomatoes 1 regular 1 fired roasted  (cause I said so that's why)

2 Delight Soy chicken patties sliced

Wash all you veggies and slice them down start by heating oil up to a high heat toss the garlic as soon as it hits the pan it's gonna be popping so have the onions, peppers, and carrots ready to toss in. Toss in the onions, peppers, and carrots and turn to med heat let them cook for about 5 min just till they start to soften up then toss in the mushrooms and cover for 5 min. Now you to sprinkle some your salt/pepper in to help everything start to come together. Add chicken and tomatoes along with the rest of the spices mixing in well, turn heat to low and cover let simmer for 10 min.














 Now the taters are not like normal mashed taters you want them to be drier than normal cause of the liquid from the cacciatore will make them very creamy on your plate. 

Dry Mashed Taters

4 cups red potatoes washed and broiled and drained

1 tbsp earth balance butter

2 tbsp vegan milk (we make our own almond milk)

1 tbsp black pepper

2 tbsp dried parsley 

Mash together all the ingredients remember they are suppose to be dry looking just wet enough to clump together.









Now just plate up with the taters on the bottom and you will love this meal. If you are cooking the taters at the same time as the cacciatore then the meal will only take 25min start to finish.
